Ingredients for Dum Aloo Bengali Recipe

The following are the ingredients required to make Vegetarian Aloo DUm Bengali:

  • Potatoes- 1 kg
  • Mustard oil -200 ml
  • 3 tomatoes
  • 30 grams of ginger
  • 7 green chillies
  • 10 cashew nuts
  • 2 bay leaves
  • Kashmiri chilli powder- 2 tsp
  • Turmeric powder- 1 tsp
  • Sour yogurt -2 spoons
  • Sugar- 1 spoon
  • Ghee -1 spoon
  • A small amount of coriander leaves
  • Salt to taste
  • 1 cup of water

Besides for making spices:

  • 1 teaspoon of whole cumin seeds
  • 1 spoon of whole cabbage
  • Cardamom- 4
  • Cinnamon -1
  • 5 cloves
  • 7 dry chillies
  • Pepper -1 tsp
  • Poppy seeds- 2 spoons

Steps for Making Dum Aloo Bengali Recipe

Step 1

1) To make aloo dum bengali, first cut the potatoes into medium size and wash them well in water and put them aside in a bowl.

2) Now make kashmiri potato dum masala. For this, turn on the gas and put a pan in the oven on low flame and add 1 spoon of whole cumin seeds, 1 spoon of whole coriander, 4 cardamoms, 1 cinnamon stick, 5 cloves, 7 dry chilies, 1 spoon of red pepper, 2 spoon of poppy seeds and shake it lightly. If smoke comes out of the masala, you will know that the masala is roasted. Then cool down the roasted spices and grind them well with a mixer. Then pour the mix into a bowl and keep it covered.

3) Now take 2 tbsp sour curd in a small bowl and it is good.

Step 2

1) Now make a paste for recipe for bengali aloo dum. To make the paste, take 3 crushed tomatoes, 7 raw chillies, 30 grams of ginger, 10 cashew nuts and 2 spoons of chickpeas. Then put all these ingredients in a mixer and add a cup of water to make a good paste.

Step 3

1) Now it’s time to fry the cut potatoes. For this, place a pan in the oven and add about 200 ml of mustard oil. When the oil is hot, fry the potatoes well in the pan. When the potato turns red, you will know that the potato is fried. Now keep the fried potatoes in a bowl.

2) Add 2 bay leaves, 2 spoons of Kashmiri chilli powder and 1 spoon of turmeric powder to the remaining oil in the pan. Shake it for 30 seconds and add the previously prepared paste. Then mix it well.

3) Then add some salt and mix it well. Then boil well for 2 to 3 minutes.

4) When the oil starts to release well from the masala, you will know that the masala is ready. Then it should be mixed with pre-ground fried spices.

5) Then saute the masala for another 3 to 4 minutes, add the fried potatoes and mix the potato with the masala well.

6) Then add 2 spoons of pre-whipped sour curd to it. Mix sour curd well and add 1 spoon of sugar to it. After mixing well once more, close the lid of the pan and boil for 10 to 15 minutes.

After 15 minutes, open the lid and check if the potatoes are cooked. If the potatoes are cooked and oil floats on the gravy, add 1 tsp ghee and crushed coriander leaves to add more flavor to the Kashmiri Aloo Dum. And serve hot vegetarian Dum aloo recipe bengali with Luchi or Kachuri.

Tips for Recipe for Bengali Aloo Dum

1) Do the whole cooking on low to medium flame.

2) We did not use water in the whole cooking. But you can use water to thin the gravy if you want.

3) You can do the whole cooking in white oil if you want.
