● Govinda bhog rice- 200 grams.

● Moong dal- 200 grams.

● Ginger- 50 grams.

● Tomatoes- 5

● Potato- 400 grams.

● Cashews and Raisins- 15 gms.

● Cumin- 1 tsp.

● Randhuni- 1 tsp.

● Mustard oil- 60 ml.

● Turmeric powder- 1.5 tsp.

● Kashmiri Chilli Powder- 1/2 tsp.

● Coriander powder- 1 tsp.

● Dry Chillies- 5

● Bay leaves- 4

● Sugar- 1 tsp.

● Water – as needed.

● Salt – to taste.

● Ghee- 2 tsp.

● Garam masala- 1 tsp.

● Chop coriander leaves- little.

Authentic Khichdi Recipe in Gujarati style

Step 1: Wash moong beans and rice

To make Gujarati Khichdi Recipe, we need to wash moong beans well. For this, turn on the gas and heat a pan and fry 200 grams of moong beans in it. At this time, keep the gas flame very low. Otherwise the dal may burn. When the dal is fried to a light red color, you will see a beautiful smell. You will understand that the dal is fried. Then turn off the gas flame and take the fried dal in a bowl.

Then wash the dal well with water between the fried dal. Wash the dal by changing the water 2 to 3 times. Then drain the water and keep the dal as it is.

Now the very important ingredient of Bengali khichuri recipe is to wash Govind Bhog rice. For this, take 200 grams of Govind bhog rice in a container and wash it 3 times with water. Once the rice is washed, drain the water and keep the rice as it is.

Step 2: Make a paste

Since today we are talking about Gujarati Khichdi Recipe, so understand that this is a vegetarian recipe. And onion and garlic will not be used in this cooking. Here we will make a paste with ginger and green chillies. If you make a paste and cook khichdi in this way, the taste of it is doubled. To make this paste, add 50 grams of sliced ​​ginger, 8 green chillies in a mixer.

At the same time add 1 teaspoon of whole cumin and 1 teaspoon of radhuni to the mix. Now make a paste with little water in the mixer. Let’s say at this point, to enhance the taste of khichdi, you must use radhuni. But if there is no cook at home then you can skip this masala. Once the paste is made, pour it in a container.

Step 3: Make tomato paste for Khichdi Recipe

To make Bhog Khichuri, now you have to make a tomato paste. For this we will take 5 medium size tomatoes. Cut the tomatoes into pieces. Then take the tomatoes in a mixer and make a fine paste. If you don’t want to use tomato paste, you can also use tomato paste.

Step 4: Fry the potatoes and cashews

Many people use potatoes for cooking khichdi. If potato is used, it is good to eat as well as the taste of cooking increases a lot. We will use 400 grams of potato here. First, take the potatoes and peel them well. Then cut a potato into four slices. After the potatoes are cut, they should be washed well with water. Then put a little salt and turmeric in the potatoes.

Now turn on the gas and heat it on a pan. If it is very hot, add 60 ml of mustard oil. When the oil is hot, add the cut potatoes and fry them well. Keeping the gas flame medium, the potatoes should be fried and removed.

Add 15 grams of cashews and raisins to the oil in the pan. Then lightly stir and fry. Once fried, take it out in a container.

Step 5: Make the gravy

Now we have to prepare a gravy for making gujarati khichdi recipe. For this, it should be cooked in the remaining oil in the pan. Now put 5 whole dry chillies and 4 bay leaves in hot oil. Now fry them until fragrant.

When the dry chillies are slightly browned, add 1 teaspoon of turmeric powder in the oil. After stirring the turmeric once, put the ginger and green onion paste prepared in the oil. Now cook well in medium flame for 3 to 4 minutes. When the raw smell of ginger disappears, add 1/2 teaspoon of Kashmiri chili powder and 1 teaspoon of coriander powder. Grind the spices well for 2 minutes.

Now put tomato paste in masala. Then cook well in medium flame for 10 to 12 minutes, until the raw smell of tomatoes disappears. Add salt to taste and 1 teaspoon of sugar at this time. Light oil from the masala will make the gravy ready. Now take down the pan and put the gas in the pot.

Step 6: Preparation of Bengali Khichuri Recipe

A quantity of water should be given through the handi placed in the gas. Let’s say at this point, the amount of water to be used in khichdi should be given at one time. In this place we are using 2 liters of water. Heat it well with water in the handi. When the water is hot, add 1/2 teaspoon of turmeric in it.

Mix turmeric once and put mung dal in it. Then let the dal cook well on high flame. When the dal is cooked, add Govind bhog rice. Then stir the rice and dal well and cook it for 15 to 20 minutes with a lid. After 20 minutes open the lid and you will see that the rice is 80 percent cooked.

Now put the previously prepared gravy and fried potatoes in the bone. Then mix well with khichuri. Then add salt to taste through the khichdi. Then stir well and cook for 5 to 8 minutes. At the very end, turn off the gas flame and mix it with 1 teaspoon of ghee, 1 teaspoon of garam masala and pre-fried cashew-raisins to make a delicious bhog khichuri recipe.
