Kadai Chicken Curry Recipe Ingredients

Ingredients for Kadai Chicken Recipe

  • Whole cumin seeds- 1 tsp.
  • Whole Coriander- 1 tsp.
  • Fennel- 1 tsp.
  • Pepper- 2 tsp.
  • Kashmiri Red Chillies – 3

Chicken marinate dressing

  • Boneless Chicken- 750 gms.
  • Ginger garlic paste- 2 tbsp.
  • 1 tablespoon lemon juice.
  • 2 teaspoons of Kashmiri chili powder.
  • 2 teaspoons of salt.

Preparation of gravy

  • Ghee- 3 tbsp.
  • White oil- 2 tbsp.
  • Large Cardamom- 2
  • Cinnamon – 1 inch.
  • Bay leaves- 2
  • Chopped onion- 1 cup.
  • Ginger slivers- 1 inch.
  • Garlic cloves- 2 tsp.
  • Tomato paste- 1 cup.
  • Green chillies- 5 pcs.
  • Sour yogurt- 1/4 cup.
  • Salt- 1/2 tsp.
  • Cubed capsicum- 1/2 cup.
  • Cubed onion- 1/2 cup.
  • Garam masala- 1/2 tsp.
  • Turmeric powder- 1/2 tsp.
  • Fresh cream-1/4 cup
  • Kasuri Methi- Tablespoon.
  • Chopped coriander leaves- 2 tbsp.

Best chicken curry kadai recipe steps

Step 1: Prepare Kadai Chicken Masala

To make kadai chicken first we will prepare a powdered masala. For this, take 1 teaspoon of whole coriander, 1 teaspoon of whole cumin seeds, 1 teaspoon of fennel, 2 teaspoons of pepper, 3 Kashmiri red chillies in a pan. Then turn on the gas flame and put the pan on medium to low flame and fry the masala by stirring well. It should be fried till a nice aroma comes out from it.

Once the masalas are roasted, switch off the gas and take the masalas out of the pan into a bowl. Then wait for 5 minutes, until the masala cools down. When it cools down, take the fried masala in a mixer and make a light powder. No need to grind too much.

Step 2: Marinate the chicken

Now to make chicken kadai, the chickens should be marinated. Here we have made kadai chicken with 750 grams of chicken. For this, first the chickens should be washed well with water and cleaned.

Now the washed chickens should be marinated. Then drain the water and put some powdered spices in it. Here we will use 2 tablespoons of ginger-garlic paste, 2 teaspoons of Kashmiri chili powder, 1 tablespoon of lemon juice and 2 teaspoons of salt for chicken marination. Now rub all these spices well with the chicken. Then keep the marinated chicken covered for at least 35 to 40 minutes.

Step 3: Prepare Kadai Chicken Gravy

Put a pan on the gas flame. As per the name Kadai Chicken recipe, it is better to be made in Kadai. But you can also do it in a non stick pan if you want. Keep the gas flame medium to high and heat 3 tablespoons of ghee and 2 tablespoons of white oil in a pan.

When the oil is hot, add 2 large black cardamoms, 1 inch of cinnamon, 2 bay leaves and stir well. No need to stir for long, just 4 to 5 seconds is enough.

Now saute 1 cup of chopped onion in the oil until the onion turns brown in color. After stirring for 6 to 8 minutes, the onion will be fried.

Now put the marinated chicken in the kadai and add the prepared chicken kadai masala. Then mix well with onions and cook on high flame for 5 to 6 minutes.

After 6 minutes, when you see that the masala is fried well, add 1 inch of finely chopped ginger, 2 teaspoons of garlic, 1 cup of tomato paste and 5 chopped green chillies. Now stir and cook well for about 3 to 4 minutes.

Now keep the gas flame medium and add 1/4 cup of whipped sour curd. Then add 1/2 cup of water and 1/2 teaspoon of salt and mix well. Now cover the kadai with a lid. Then reduce the gas flame completely and wait for 90 percent cooking. Cook in this way for about 30 to 35 minutes with a lid.

After 35 minutes, open the lid of the kadai and add 1 cup cubed capsicum, 1 cup cubeb onion, 1/2 teaspoon garam masala powder, 1/2 teaspoon turmeric powder and cook well for 2 to 3 minutes.

After 2 to 3 minutes add 1/4 cup of fresh cream and 1 tablespoon of Kasuri methi leaves. Crush fenugreek leaves by hand and then use. If you need salt in cooking, then add salt as needed. At last switch off the gas flame and sprinkle some coriander leaves on top.
