Ingredients to be used for Kolkata Arsalan Biryani

a) Main materials:-

  • Chicken- 1.5 kg.
  • Basmati Rice- 1kg.
  • Potato- 500 grams.
  • White oil- 200 ml.
  • Ginger-garlic paste- 3 tbsp.
  • Salt – to taste.
  • Onion- 400 grams.
  • Water- 4 liters.
  • Sour yogurt- 200 grams.
  • Milk- 2 cups.

b) Other materials:-

  • Kashmiri Chilli Powder.
  • Red chilli powder.
  • Biryani masala.
  • Keora water.
  • Rose water.
  • Perfume.
  • Kesar.
  • Aloo Bukhara.
  • Fresh cream.
  • Raw milk.
  • Cardamom.
  • Cinnamon.
  • Bay leaves.
  • Ghee.
  • Orange food color.

Steps for Making Arsalan Biryani

Step 1: Soak the rice

To make new arsalan biryani, take long basmati rice. The better the quality of biryani rice, the tastier the biryani. To make Biryani, first wash 1 kg of rice well. Wash 3 to 4 times. After that basmati rice should be soaked for at least 1 to 2 hours.

Step 2: Biryani Masala

To make kolkata arsalan biryani masala, grind 1 tablespoon jaitri flower, 1 tablespoon dried rose petals, 1 teaspoon shahi jeera, 20 small cardamoms, 1 tablespoon samrich, 1 nutmeg in a mixer. Only then will the fragrant biryani masala be prepared. If you don’t have the time or materials to make the masala, you can buy ready-made biryani masala from the store.

Step 3: Making Ginger Garlic Juice

● Ginger garlic juice- 4 large size garlic and 2 pieces of medium size ginger should be made into a fine paste. Mix enough water with this paste and take out the ginger garlic juice well with a strainer.

● Preparation of mixture of Attar and milk: Mix 1 or 2 drops of Attar in a cup of warm milk and keep it in a mixture.

● Kesar Milk Mixture – Soak 1 cup of hot milk with few saffron.

Step 4: Fry the potatoes

Potato is the specialty of Arsalan Biryani or Kolkata Biryani. This recipe will remain incomplete without potatoes. So to make this biryani we will peel 500gm large size potatoes, cut one potato into two slices along the middle and wash it with water. Now put the cut potatoes in a pressure cooker, add 1 tablespoon of Kashmiri chilli powder, 1 tablespoon of salt, 1/2 teaspoon of biryani masala and 1/4 teaspoon of orange food color for color. Now add 1 tablespoon of sour yogurt, 1 tablespoon of oil and 1/2 teaspoon of coconut water.

Now mix well with potatoes and add 1/2 cup of water. Then close the pressure cooker lid and turn on the gas flame and take two whistles. If you give two CTs, the potatoes will be cooked. Now remove the potatoes from the pressure cooker and fry them. For this, put a pan on the gas and heat it with 200 ml of white oil. Now put the gas flame on medium and deep fry the potato well.

Step 5: Making fried onion or Barista

To make Kolkata Arsalan biryani, peel and slice 500 grams of onion. The thinner the onion, the crispier the barista will be. Now fry the chopped onions and potatoes well in frying oil. Fry the onion until it turns brown. When it is baked, remove it from the pan and keep it on a tissue paper. It will pull the oil from the barrel.

Step 6: Fry the chicken

To make biryani, I will take 1.5 kg of chicken pieces. You can keep the chicken pieces as per your preference. Now wash the chicken well and apply a little orange food color in it. Now fry all the chicken pieces in the potato frying oil. Fry the chicken until golden. When fried, keep the chickens aside.

Now take a big biryani pot and put the remaining oil of potato-chicken frying in it. Add ginger garlic juice, some beresta, a piece of cinnamon, 4 small cardamoms, 2 tablespoons of chili powder, 2 tablespoons of salt. After mixing it well, add 200 grams of sour curd, 2 tablespoons of coconut water and 1 cup of water.

Then mix well once more and add fried chicken in it. Now close the lid of the pot and place it on the gas stove. Then cook well for 15 minutes on high flame. Open the lid once after 5 minutes and shake it.

After 15 minutes, open the lid and you will see that the juice has started to boil well. Now shake the chicken well and cook it for another 10 minutes with the lid on. After 10 minutes you will see that the chicken is cooked well. Now take the chicken pieces from the juice one by one and put them on a plate.

On the other hand, if the juice is a little cold, you will see oil floating on top. Keep the oil in a separate bowl and the juice in another bowl.

Step 7: Cooking the biryani rice

To cook biryani rice, heat about 4 liters of water in a large pot. When the water starts boiling, add 3 tablespoons of salt, 2 bay leaves, 4 small cardamoms, 2 cinnamon pieces. Now add the soaked rice. Do not stir too much after adding the rice, otherwise the rice may break. Cook 80 to 90 percent of the rice over time. When the rice is cooked, eliminate the extra water.

Step 8: Layering of Biryani

Now it’s time to layer Biryani. For this, take a biryani pot, in which place the biryani. First of all add the remaining juice of the cooked meat to this vessel. Pour khoya kheer, beresta, 2 tbsp fresh cream, 2 tbsp ghee, potato bokhara, 1 tbsp garam masala, milk mixed with sweet spices one by one. Now mix all these ingredients well.

Now put the cooked chicken and fried potatoes in it. Now add hot rice on top. Then label it well. After leveling the rice, spread the beresta, some biryani masala, khowa kheer, meat oil, saffron mixed milk on it. And at the very end, mix some orange food color in 1 teaspoon of rose water and spread that mixture over the biryani.

Step 9: Simmer the biryani

After completing the biryani layering, I came to the original and final step. Now the biryani will be ready after taking it for a long time. After layering the biryani, close the lid of the pan well with flour or foil. Then put a plate on the gas and place the biryani pot on it. After 15 minutes on high flame, then 15 to 20 minutes on low flame, Kolkata Arsalan Biryani will be ready.
