The Thai Green Curry Recipe comprises of two parts. First is the making of the curry. And another one is the making of the thai green curry paste recipe.

Green Curry Thai Paste

  • Lemongrass: 5-7 Stalks
  • Chopped Green Chillies: 3 Pcs
  • Coriander or Dhania Leaves Chopped: ¼ Cup
  • Spring Basil Leaves: 3-5 Pcs
  • Whole Roasted Coriander Seeds: 1-1.5 Tbsp
  • Roasted Cumin Seeds: 1 Teaspoon
  • Roughly Chopped Onion: 1
  • Whole Black Peppercorns: 1 teaspoon
  • Garlic Cloves: 3-4 Pcs
  • Ginger: 1-1.5 inch
  • Salt: According to Taste

Thai Green Curry Paste

  • Unsweetened Coconut Milk: 400ml
  • Green Curry Thai Paste: 3 Tablespoon
  • Broccoli: 1 Cup
  • Sliced Carrot: 1 Pc
  • Green or Red Bell Pepper: 1 Pc
  • Water: 1 Cup
  • Brown Sugar: 1 Tbsp
  • Spring Basil Leaves: 1 Pc
  • Oil: 1 Teaspoon

Making of the Thai Vegan Green Curry Recipe

Since there are two different parts of making the green curry thai, the making process also contains two different parts. 

Thai Green Curry Paste Recipe Making

  1. Firstly, I will prepare the green curry thai paste.
  2. I will take the lemongrass and trim it properly. Also, trim all the parts below the base which are not required. Also, I will start cutting the dried part of the root till a stage where the roots cut easily and becomes soft.
  3. I will not use the leaf part for the making of the paste. The leaf can be used for any soup or tea for flavouring purposes.
  4. Take a blender and put all the ingredients taken for preparing the green curry vegetables thai paste. I will grind the entire paste using the blender.
  5. Once the grinding is done, open the lid and stir using a spoon to combine the rest of the leftover ingredients. Some of them includes: Garlic, Ginger, Onion, Coriander Leaves, Basil leaves and Green Chillies.
  6. I will also add some more quantity of water to make the paste smoother.
  7. Then, I will transfer the prepared paste into a glass jar. From here, we will only need 3 tablespoon of the paste for preparing the Green Curry.

Vegetarian Thai green Curry Making

  1. Once the paste is prepared, I will start making the green curry for the recipe. Consider a heavy wok and heat 1 teaspoon of oil. Add all the vegetables which are taken like carrots, bell pepper, broccoli and others.
  2. Keep the oven to high heat. Add some salt and keep on stirring the vegetables. Once the vegetables become soft, I will turn off the heat and keep it aside.
  3. Again, add 1 teaspoon of oil in the heated wok and 2-3 tablespoon of the green curry thai paste prepared previously.
  4. I will add a cup of water and stir it properly to combine the curry. Add 1 tablespoon of brown sugar and 400ml of coconut milk.
  5. Again stir all the ingredients properly and add the salt. Once the salt is added, stir it again till the mixture comes to a boil stage.
  6. Once it is in the boiling phase, I will add the basil leaves to the mixture. Stir the mixture properly and once the green colour appears and boils, we will understand that the Vegetarian Thai Green Curry is Ready. 
  7. You can serve the Thai Green curry with rice to enjoy your Thai styled meal.
